I use Latex all the time for papers and so on, but in my opinion, OOo format is much more useful and approachable. How about storing docs in svn unzipped and don't worry about rezipping them automatically on checkout? Instead, provide generated pdf output, and let people who work on the OOo docs zip/unzip them themselves. It's not hard to do. I wonder if OOo can deal with document directories in an unzipped form. If not, it should.
