Yes and no. AFAIK only the 3D accelerator is not publicly documented.
The rest is completely open and well documented in the TRMs.
You get even the documentation for parts that you can only get when
buying at least >100k/year on their website (also known as non-catalog parts).
Drivers for most of the SoC peripherials is in mainline kernel
(AFAIK some obscure stuff is missing from the newer SoCs).

We[1] have played big buck bunny on 6 lcd display at full resolution
on each display using 6 beagle boards a couple of years ago[2].
The beagle xM and the bone have both faster processors than the ones
used on these first-generation beagles.
