I think that rather than running a file server on your laptop, you want disconnected mode, which lets you continue to access and use your files while disconnected from the network and then push those changes back once you reconnect. It's implemented in the cache manager rather than in the file server. Disconnected mode is currently still under development and has some bugs, but it's at the point where I believe it's usable if you're willing to put up with it not always working.
