Comments made on a previous CFMAIL/GAE thread - http://groups.google.com/group/openbd/browse_thread/thread/071d6e2ec269a40d - has (I think) shown what the answer is.
For my contact form I was trying to use the inquirer's email address as the "from" attribute on the CFMAIL tag. Perhaps, not surprisingly, the from attribute needs to be the same email address that associated with the GAE account. A bit inconvenient (can't just hit 'reply' when it shows up in your inbox as you'll be replying to yourself, not the contact form sender) but I'm sure they do that for spam/phishing reasons.
