Aaron,

We do this - virtual sites, but I don't think I would be ably to help much. We 
use the vivioTech installer which uses apache and tomcat.  Apache is easy to do 
virtual sites on one IP - there were some twists to getting tomcat to play nice 
but I've got that mostly figured out.
We have 4 production servers set up like this and they have been very stable 
and responsive so far (we've been running this for almost a year now I think).

I do not know how to do that with jetty though.
