The cfmail tag also has a "server" attribute, which you would
conceptually set to localhost. You can also set port, username,
password, etc. The settings in the xml file (Administrator) serve as
defaults, but you can customize everything in a single cfmail tag.
CFMAIL will send messages to Mail Transport Agents (MTAs) like
Sendmail and Postfix. MTA's don't keep mail for long - they just
transmit it (unless they are owned by the NSA... am I right folks?

SMTP and POP servers (like Dovecot) are used to store & organize
the mail arriving at your own domain's MTA - and transmit them to
your final client reader (perhaps after passing the messages thru
"filtering daemons" like Procmail).
I've never worked with CFSMTP, but I imagine it handles the final
reception part (like Dovecot) just with less features?

I understand the cfsmtp plugin creates a local server that
listens for mails an runs a CFC for each mail received, that's
what I want to play around with.
