What OS are you installing it on? I'd use CentOS minimal, and install the bare minimum apps you need to make it run.
Once it's all setup, I'd create a script that allows you to easily modify the components necessary to customize install (change IP, hostname, root pw, etc) Then, just export the VM as an appliance. Assuming you're using vmWare......
