You have not to change the config-files. Simply create the CA-cert. The new versions of OpenCA ask like the old versions for an emailaddress, a common name etc. but they display at the last step the full DN and you can change this DN.

Please take in mind that you must use the correct attributenames like defined by OpenSSL. You can find these definitions in the sourcecode of OpenSSL in crypto/objects/objects.txt. OpenSSL is casesensitive!!!
