I am on CentOS 8 Stream and packages are from EPEL. Just figured out that using the
command line with --protocol=fortinet, openconnect tells me that fortinet is not a known
vpn-protocol. I see how to make use of the copr repository.

As long as you have a current build of OpenConnect, the new protocols
should turn up automatically in NetworkManager config.
If you're on Fedora, you can use the automatic package builds from
https://copr.fedorainfracloud.org/coprs/dwmw2/openconnect/
