usually analytic entries are written when invoice is confirmed. So, when
you confirm the invoice generated from your sale order, analytic entries
are written.
Moreover, if you want commercial documents to create analytic entries
independently of invoice confirmation, you can follow the way of
'deferred choice' modules: http://apps.openerp.com/?text_search=deferred
For purchase orders, 'purchase_analytic_deferred_choice' is available.
As we didn't need this behaviour for sale orders, no
'sale_analytic_deferred_choice' module exists, although it should be
easy to create.
