The NFS server exports will function just fine in such a case. This is no different from any other multihomed client, and /etc/exports can be configured appropriately. What wouldn't be useful would be to use MAC addresses (GIDs) for mounting, exports, etc. Can you imagine administering a network where hardware addresses were the only naming? No sysadmin would even entertain such an idea.
