In quantal the problem seems to be no longer reproducible. Is it still there in oneiric?
@damien: Normally if you tell the system to remember passwords they are saved into the gnome-keyring. If there is no keyring there is no source empathy can getthe passwords from - except perhaps asking you for the passwords on every start up.
