Hi Ken,
well if you have a dynamic database, I think you better create polygon
features so be downloaded via WFS as vector elements. I don't think you can
change the style of a raster dynamically, you just can request a new WMS
layer with a different a 'styles' parameter so that the server changes the
style of the layer.
