On your measure control add a callback modify: function(point, line) { ...}
where you would calculate the distance of the segment and display it as
needed... obviously, you'll need to do some housekeeping to keep the display
clean. But it works...

We have a customer who really likes the measuring tool, but would like to see
it's functionality combined with the line-drawing tool.
That is, they want to draw a line that starts at a point, and extends 6000
feet. They'd like to see the current length of the line being drawn displayed,
while they are drawing.
They aren't asking for the areas of polygons to be displayed, but that would be
the obvious generalization.
This strikes me as something that might be pretty easy to do, if you had
sufficient insight into the design of OpenLayers.
Any hints as to how to do it?
