ldapsearch -{normal stuff here} cn=<value> '*' '+'
And then man ldapsearch and read the 'operational' section of the
manpage (near the top)

Are you searching for operational attributes by adding '+' onto you
ldapsearch? Most of the ppolicy attributes are operational.
