I did more playing since reporting this, and discovered that, as @Phill finds, setting it to very large values does work. It's tricky: in traditional typography typefaces and their leading are described like "30/36pt", but modern apps such as Word would regard this as font size "30pt" and line spacing "1.2" or "6pt" after paragraph. So, perhaps it's more of a comment on the need for the documentation to reflect this, and the default settings when making a new Theme are more sensible. Currently they are "Size 40pt" and "Line Spacing 0pt".
