Goto Administration > Configuration section in OpenMeetings User Interface.
there are some config_keys, basically the same as during the Installation. After a change in the Mail-Settings I would recommend a restart of red5, the Mail-Settings are somehow stored in the Java-Session, to make changes effect immediately a restart is the best way.
