Hallo Norbert,

actually the rooms should have some short description in its name already:
conference 1-25 users
audience 1-50 users
restricted 1-150 users (maybe you can extend that even to 250)
interview ... is very different from a conference room, you can make
kind of "interview" with 1:1 in that room.
custom => you extension point for your custom room plugin

further there are some settings available by default for each room,
but mainly the difference is about the users and how to handle them.
