I am one of the developers of Openmeetings and my primary platform I am using to develop Openmeetings is OSX since it was called Tiger.
But I have to agree that some of the packages are hard to install so I do not test/debug the converters/import on OSX since the last upgrade to Snow Leopard. But I had it running once, you can use for example http://www.finkproject.org/ to have Linux standard packages available. SWFTools is kind of tricky if you want to use that in production you have to compile SWFTools from source as fink project SWFTools pacakge is kind of outdated. OpenOffice task has not been a problem for me in the past you might need to set the path to OO in the Administration of OpenMeetings since the JODConverter task automatically starts/stops the OO service in the background.
