Strange. Just doing a test here, using Ctrl + s resulted in the project being saved. Opening the project again confirmed that the changes were saved. The Autsosave function should also periodically save your project. If you run OpenShot from the terminal you should see something like 'Autosaving...' when the autosave runs and 'Project saved' when you use Ctrl + S.
