For that I use the fix focus possibility of the viewer

- press the Alt key and place the cursor at the center of the object (here is 
"his watch on the hand")
- using the wheel of the mouse and the camera control to verify the 
possibilities of zoom and pan
- when you are ready to record, clear the menus your screen using Ctrl-Shift-U 
(V2/3) or Ctrl-Alt-F1 (V1)
- start to record and use Alt-Up and Down arrows to zoom in / out and Ctrl-Alt 
and arrows to orient, and Ctrl-Shift-Alt to pan the view

This requires some practice to get it 8) ...

... and avoid recording long scenes, especially with avatars, and prefer to cut 
into short sequences and then assemble them
