Most SoC solutions are ARM/MIPS based, currently Solaris won't run on those architecures, in addition to ISA differences, average SoC solutions do not have the memory capacity to run Solaris. However, by looking at the requirement you mentioned. ViA Eden platform seems to be a fit. For an "embedded" system, hard disk is an overkill. However, if Compact Flash card is used, you might need to take swap activity into consideration.
