I would only have two slices, "/" and swap for file systems. Users don't really 
get shell accounts these days, so the argument of users filling up the / FS is 
moot.

Also, if one doesn't have a monitoring solution that alerts when the disk 
capacity thresholds are reached, one is already in trouble before the whole 
exercise started.

LUN sizing can be a disadvantage depending on the software one uses (ZFS with 
iSCSI solves that problem).

Other than that, the advantage is that everything is centralized and one saves 
on storage costs. In some cases, immensely.
