Beg to differ slightly - the OpenSolaris 2008.05 installer has the simplicity and modern look you're looking for. SXCE and Solaris 10 in particular have very slowly evolving feature sets, including the installer, due to a perfectly reasonable sense of caution on the part of Sun's engineers. If you want it to look like Linux, go for the churn-heavy world of OpenSolaris/Indiana. Then you get your enterprise support without the shackles of backwards compatibility.
