Whoever cooked up Nimbus frankly did an outstanding job, IMO. It's very polished, and very easy on the eye - in that it's comfortable to use for extended periods of time (i.e. not garish). I can't really think of a better default theme, and I'm a long-time Mac user.
Even Ars Technica made a point of highlighting just how good Nimbus is: "One of those customizations is a unique and distinctive theme called nimbus, which has soft colors, smooth gradients, and a slightly bubbly look.
