Solaris can easily read/write FAT to FAT32. It can be made to read/write NTFS if you install additional software.
Assuming that you have a great backup of everything it might be easier to just re-install. Forget about using the gparted that comes with OpenSolaris and use the Gparted Live CD. Setup the first partition for Windows, whatever version you want and the same for the filesystem. If you need to have OpenSolaris read it then you can use FAT32 or install the NTFS tools. Have Gparted create some filesystem for partition 2, probably Linux Swap and then just have the OpenSolaris installer reformat it as Solaris2.
