It depends on what sort of setup you have, what your skills are, and what you
want to do with the information you get, I think.
What comes to mind first is to use IPFilter logging, but you could also use
DTrace to observe what the IP stack is doing, or simply use snoop/tcpdump/
wireshark to observe the packets floating your way...
