Well seeing as lot's of you have viewed this and none have commented, I'll tell you that I scrapped the idea.
I'm now using a single 80GB drive for the root pool and a raidz array of three complete 750GB disks. This gives me a better chance of recovery in the case of a drive failure and a spare to keep. Also performance seems much better with complete drives. Copying to the raidz array over CIFS is significantly faster this way. I'll mirror the rpool using a USB drive later...
