Ram use is not a bad thing.  Most good Unix variants will use as much
memory as they can to speed up applications.  ZFS does this too.

A better test might be to run 'iostat -x 5' or something similar while
the slowdown is going on, so that you can see if the machine is
actually running *out* of memory and needs to swap.

To see how much ram is being used by ZFS, check out the arcstat.pl script.
