Just to follow up, I've found that there is no way to override the bootpath from the grub kernel command line.
The only way I can persuade this setup to boot, is by using the failsafe option to mount /, editing bootenv.rc and changing the bootpath there. "bootadm update-archive" is then used to rebuild the boot_archive, which is a ram disk that contains a copy of bootenv.rc (and other things). You also need to edit /etc/vfstab and make sure the device names match up to the virtual hardware. Needless to say, this isn't trivially changed on the fly. If anyone has any suggestions on how to make this process less painful, please let me know.
