Is there a possibility to tune ZFS cacheing?

I would like to have a permanent read-cache for /var/www & /var/mail.
I don't want that the cache will be deleted all the time if I do a big I/O task 
on another partition.
I would like to have an identically behavior like tmpfs with the exception that 
if I write on /var/www it will be written on disk but stay forever in RAM disk 
for reading.

Is this possible?
