By "my" you mean your own PC? From this log it seems to *send* OK.

And it stops there, nothing more? Did Outlook die or give any error? 
(Is Outlook still running when you look at the file? Maybe you must exit.)
Is the pop3 access also sendmail or something else? (I don't know sendmail, 
but from a quick google it looks to me like pop3 is a separate program.)
Are {pop,mail}.di.ubi.pt actually the same machine or different machines, 
and if so same or different software and configuration? 

Are your (other?) client problems on SMTP=send, POP3=receive, or both?
