We (Citrix) have used CentOS 5.5 (kernel 2.6.18-194.32.1.el5xen), in small pilot environments. Our choice has fallen on CentOS for reasons that I am not going to bore you with. We are going to switch to Ubuntu not because of performance but primarily because of packaging.
What are your concerns? Performance, stability or setup complexities? A.
