I could solve the problem: Thanks to all for assistance

Just for Knowledge: I checked logs as may persons juggested me to do (not only 
the quantum log BUT also the plugin logs) and I discovered that the openvswitch 
plugin was not correctly installed

So I just reinstalled and reconfigured the plugin and now everything works

Check both api and compute logs:
/var/log/nova/nova-api.log
/var/log/nova/nova-compute.log

you can check as well quantum server' logs:
/var/log/quantum/server.log

I have an installation of Openstack+quantum+openvswitch plugin
To do that I carefully followed instructions from this guide:

(so there you can find basically any info about my configuration files)

Everything looks working fine BUT when I finally try to create a new istance 
(either from command line OR web interface) I only get VM eternally  in 
"spawning" state (see snapshot below):
