The root file system is / which is mounted during the initialization and has no entry in fstab. How else could you have a running system with a file system? You can resize the partition used for the root file system on the system you wrote the image to the SD card. You can use YaST on that system to do so. You may also define a swap partition on the SD card and/or a separate partition for data.
