could be done this way
<strip type="delete">
<file name="..."/>
</strip>
Put the strip section below the toplevel <image> section. It's a
powerful section only applied when the initrd is build. The
contents are merged with the default strip section from
/usr/share/kiwi/metadata/KIWIConfig.xml
