This problem with WebDAV still exists; but I have discovered that I can reliably open and edit any file my dragging the file from Nautilus to the editor [drag-n-drop], such as dragging a file from Nautilus to GEdit. Then it opens, can be edited, etc... It is only the "Open With..." behavior that exhibits this broken-after-the-first-file behavior.
