My suggestion for that audience - what about something on how to
create a brochure with open source tools? How to upload your images
from your camera, edit them (most will need to know how to adjust
brightness/contrast, crop and use a clone tool to erase a detail; mask
an area and use blur to soften background, that type of thing).  Use
Inkscape to create a logo (easy to convert a raster image into vector)
and then take them both into Scribus and create a document advertising
their business or informing their clients.

At the business I was working in, very few of the staff were able to
use even simple editing and publishing tools, and the high cost of
Adobe licenses meant that even for a quite large company (or perhaps
because it was large and many licenses were needed) an open source
photo editor proved very useful.  (Photoscape for windows).
