That depends on the version of word previously installed.  Some versions
have an associations option.  Some don't.

In all cases that I have seen, simply right clicking on any .doc file and
select Open With, Choose Program, (select Word from list) check the
box at the bottom to always use this program.

This facility only became available in XP IIRC.
If you have it, its even easier than using the OOsetup program.
