10.1 also includes several window managers. The choice is simply of which is
considered the default environment. It doesn't mean that much, as you can
still go to the detailed selection and choose kde and other environments if
you pick "gnome", or you can pick "kde" and then go into the detailed
selection and choose whatever other desktop environments you like.

At boot time? no, linux is a multiuser OS. You don't decide at boot time, but
whenever you start an X session.
