At the boot prompt, enter

3

- tells the system to boot into runlevel 3; "Full multiuser but no graphics".

Alternatively, if you miss the boot screen, when the system is up and at the
login screen;

<ctrl><alt><F1>

brings you terminal 1. Login as root and enter

init 3

- which takes the system 'down' from runlevel 5, to runlevel 3.
