Yes. At a minimum, you can exploit the full resolution of the card for a single monitor. I'm not sure whether dual-head operation is supported by the open-source drivers, but I'm sure that if you retrieve and install the manufacturer's driver you can fully exploit the device's capabilities. You don't say what kind of video hardware you're using, but nVidia and ATI both make available Linux drivers, and that covers the large majority of cards.
