I have both Danish and English setup on my keyboard. I'm using KDE, Gnome is probably different. In the menus go to "Personal Settings" -> "Regional Accessibility" -> "Country/Region & Language" and change the settings to what you desire. You can have more than one language in the "Languages" box. There should then be a little country flag in your doc apps box. Click on that to cycle through your languages.
