This is SUSE WAD (Working As Designed) in IBM-speak. Running kernel updates from YaST is the same as rpm -U, which "updates" the existing package. (i.e. deletes the existing package to install the new package). Better to download kernel updates manually and install them with rpm -i, and then you'll have entries for both in grub, and both kernels will be bootable. I too wish SusE would change YaST's behavior, but I can understand why they do it that way since having two or more kernels installed will mean the symlinks pointing to kernel sources will only point to one of the kernel versions, which may or may not be the one being booted.
