As a result, none of the TeX/LaTeX related apps work.
That's only a symlink to a symlink, and you haven't checked if the target
does exist.
/usr/bin/pdflatex -> ../share/texmf/teTeX/bin/i586-linux/pdflatex -> pdfetex
which should belong to package "tetex".
