basically you can have as many openthinclient servers running in your network 
as you want. if you make sure they serve the same content they would do simple 
load balancing: the first server responding would be the one the thin client 
will use for the whole boot procedure.

the big question here is how to make sure your data is consistent on all these 
servers.
if you do not need persistent home directories you could fairly easy write some 
synchronization scripts or use some backup software. especially as you usually 
do not update packages or configuration settings on a more than daily basis.
if you need persistent (and writable) home directories for your users this can 
get quite challenging ;-).

And about the limit of concurrent thin client connections based on NFS sharing: 
Are you thinking about hundreds, thousands or more connections?
