Basically it's a yum install, so it's an atomic thing i guess.
Question:
Does an update of nettle from 2.7.1 to 3.2.2 throw off openvas v7 or
will it still work?

You could try using --skip-broken to work around the problem
You could try running: rpm -Va --nofiles --nodigest
Could i first update nettle and then openvas?
you could just use the support channel of whomever built your binaries!
