OpenVPN 2.x needs help from external scripts/plug-ins to setup this. NetworkManager has a OpenVPN plug-in which can handle this. And there are some client.up/client.down scripts available in the openvpn package which can tackle this. We're working on providing some OpenVPN 3 Linux client packages for Debian and Ubuntu (they are already available for Fedora/RHEL/CentOS/ScientificLinux [0]). The latest beta release tackles DNS configuration out-of-the-box, as well as other improvements. Later today I will push out yet another beta release (goal is to have a monthly release). For Ubuntu you will right now need to compile it yourself, though. But hopefully we can provide .deb packages through an apt repository in not too far future.
