By looking at your log file, I suspect that you are using "bare" OpenVPN.
If you use OpenVPN without NetworkManager then you will an extra plugin
to update /etc/resolv.conf
check the sample plugin in
/usr/share/doc/openvpn-2.4.6/contrib/pull-resolv-conf
