I haven't dived into all details of your email, but if you want to ignore a parameter sent by the server, you can do so by adding "pull-filter ignore $param-to-ignore-here". You can check the manpage for further details. After that you can add your own param line indicating the value you want to use. This said, note that MTU values need to be in sync with the server to have a 100% functional tunnel. mssfix should be a good way to fix MTU issues for TCP connections though.
